hmph. Who cares if it's a fad? Consistently packed restos that fetch $96.44 p/p located in Beverly Hills likely bang out a very healthy biz to say the least. A guy like Andres is making bank these days not just on his restaurants, but he's blowing up the spot with his Iberico ham exports as well...bravo Jose, killing it in the kitchen and beyond.

If I ever make it back to La La, sign me up for a fois gras cotton candy or two :)

Definitely! As you can see from the photo, the blue cheese is really just a small dollop for some fattiness.

It might require some trial and error, but since the recipe is pretty leanl, you might want to finish it up with a little glug of olive oil and an extra pinch of salt. Let me know how it goes!

Oooh, I love the idea, will have to give it a try. Do you think it would work without cheese for those people cutting out dairy?

Hi Blogging for Burgers - From Founding Farmers -

THANK you for taking the time to read and understand the challenges for our restaurant and our dedication to our mission.

Of course, we do have some more information that wasn't included in The Washington Post article that may be of interest to your readers - please visit www.WeAreFoundingFarmers.com - the information starts on the home page.

We promote fresh, American family farm ingredients. This doesn't always - and as you've pointed out - can't always mean local, nor does it mean organic, which is also something we can't commit to - it would be very difficult for a restaurant of our size to get consistent quantities and assured on-time delivery for our more than 800+ covers a day.

And, next time you're down in DC you'll have to come in and try our burgers - they're great!

many thanks,
Founding Farmers

Thank you BB. Keeping fridges safe for the masses! As you can guess, I'll be following these guidelines tightly...instead of nibbling on 14 day old fois terrine. What? it smells fine.
